Make a visit to the Santa Fe School of Cooking.  They have something called the "Restaurant Walking Tour." For $115, you can choose four different restaurants in which to dine, all in one night. For each restaurant, the chef serves a tapas-sized menu along with an alcoholic beverage, followed by his or her philosophy on cooking.
 
Restaurants in the line up include Restaurant Martin, The Inn at Loretto, The Plaza Cafe, II Piatto, Amavi, La Casa Sena, Rio Chama, Santacafe, Galisteo Bistro, 315 Restaurant and Wine Bar, Rosewood Inn of the Anasazi, and La Boca.
