For each restaurant, the chef serves a tapas-sized menu along with an alcoholic beverage, followed by his or her philosophy on cooking.
Restaurants in the line up include Restaurant Martin, The Inn at Loretto, The Plaza Cafe, II Piatto, Amavi, La Casa Sena, Rio Chama, Santacafe, Galisteo Bistro, 315 Restaurant and Wine Bar, Rosewood Inn of the Anasazi, and La Boca.
